Papaya Salad

Green Papaya salad originated in Laos and it is popular all over the world.
Spicy
  • ½ green papaya
  • ¼ cup of grape tomatoes, halved
  • long beans
  • thai chiles
  • roasted peanuts
  • ½ cup lime juice
  • ½ teaspoon tamarind juice
  • garlic
  • ¼ cup of dried shrimp

In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon to lightly crush tomatoes and beans. Add everything to the bowl and then toss.

Burmese Tea Leaf Salad

  • ½ lemon
  • ¼ cup fermented green tea leaves
  • 1 cup vinegar
  • 1 cup water
  • ¼ cup sesame oil
  • ¼ cup avocado oil
  • 1 tablespoon fish sauce
  • lettuce
  • sesame seeds
  • sunflower seeds
  • roasted peanuts
  • fried garlic

On a plate, place chopped romaine lettuce, tomatoes and lemon wedges. Place sesame seeds, sunflower seeds, roasted peanuts and fried garlic on the plate. Add a large scoop of fermented tea leaf paste to the center of the plate. Squeeze with lemons.
